Gungo Pea Soup ~ six servings

  • 400 grams gungo peas
  • 3 litres water
  • 400 grams yellow yam
  • 200 grams sweet potatoes
  • 4 cloves garlic
  • 200 grams Irish potatoes
  • stalk of spring onion
  • green pepper
  • thyme
  • 8 grams of pimento

Instructions

Chop potatoes and yam to similar sized pieces for easy cooking. Finely chop pepper, garlic and onion. Boil gungo peas until tender, almost cooked (about 30-40 minutes). Add all other ingredients and simmer for about 30 minutes until broth thickens. Add salt to taste.

Serve with sliced wholemeal bread and butter.
